Mignon Jam Pastries

Ingredients for about 30 pastries: 110g flour, 70g unsalted butter, 40g sugar, 1 yolk egg, a pinch of salt, your favourite jam.
Beat the egg yolk with sugar, add the butter cut into small pieces, the flour and salt. With your hands quickly work the dough on a work surface so as to form a soft ball. Wrap it in transparent film and refrigerate for at least half an hour. Shape into balls with a diameter of 2.5 cm. Keep the ball in the palm of one hand and with one finger of the other hand press to form a small bowl. Place the small 'pastry bowls' on a baked sheet paper and bake for 10 minutes maximum at 170°C. Now fill them with your favorite jam. Bake for about 20 minutes at 170°C. They are ready to serve with your favourite drink!

The Amsterdam ..ops.. cheese houses!

Last November I went to Amsterdam, the beautiful city in the Netherlands. What impressed me most were the houses narrow, high and sometimes even a bit 'crooked! I therefore thought of a recipe that would remember me this fantastic city!
Ingredients: 4 (more or less) medium potatoes, Gouda Dutch cheese.
Boil the potatoes already peeled, but remember to take them out before they are cooked completely because we will bake in the oven again. Cut them so as to form parallelepipeds with flat sides. Cut the cheese into thin slices. I used the typical Dutch tool, the Kaasschaaf, a kind of potato peeler with wider blade. Now cut the potatoes into half cm slices. Each potato will be a house: make the base with a slice of potato and one or more slices of cheese and so on to form the house. To prevent them from falling stuck a toothpick. Place the small houses on the baking sheet covered with wax paper. Bake for 10 minutes at 180°C.
Serve by putting them in line .... it is true the houses seem to the Amsterdam's?

The Drink of the Lion

Something refreshing to drink? I suggest you a new version based on ginger, an ethnic spice from India. In the kitchen is used for its spicy flavor and for its digestive properties.
1/2 l. pineapple juice, 1 l. water, 3 tablespoons sugar, 120g. fresh ginger root.
Wash the ginger root and grate it in a small bowl. Put the grated ginger in a colander and press it with a pestle until the juice comes out. You will need 3 tablespoons of juice. Pour into a jar the ginger juice, the pineapple juice, water and sugar. Mix well and serve in nice tall glass with a straw.

Homemade Pastry Biscuits: The Elephants of my Grandma

My grandma is crazy for elephants in all their shapes and materials. This is my present for her, and she enjoyed them!

Ingredients: 250g flour, 3 egg yolks, 90g powdered sugar, 175g butter, 1 pinch salt.
Remember that the butter must be of refrigerator. In a bowl beat the egg yolks with sugar, then add the cold butter cut into small pieces, flour and salt. Mix well so that the butter is well mixed with the rest of the ingredients. Now put the mixture on a floured surface and quickly form a ball, then wind it up in plastic wrap. Leave it in the fridge for a few hours, best overnight. After the appropriate time, collect the dough from the fridge and with a knife cut a slice from the ball. With the help of a rolling pin roll out the dough thickness of about half a centimeter. Now you need a mold for cookies. If you do not have it you can also use the plastic cap of the plastic bottles of water and with the help of a toothpick draw the eyes and mouth. Have fun to create the most weird shapes and your snacks will be more fun. Now put the forms you created on a baking pan and bake in oven at 180°C for about 15 minutes.

Energetic Bars for Sporty Children

This is a recipes my mom and I researched and developed together. All the ingredients are easy to find anywhere and there's no fat apart from the 2 spoons of olive oil. We're very happy of the result! Do you suggest something else?

Ingredients: 120g cereal flakes as muesli (oats, rice, rye, etc), 30g wholemeal flour, 30g dried fruit of your choice (bananas, apricots, raisins, cranberries, papaya, etc.), 30g sunflower seeds or sesame, 30g ground almonds or peanuts or other nuts of your choice, 30ml extra virgin olive oil, 100ml water. 30ml juice of your choice, 2 tablespoons honey, 1/2 teaspoon baking soda. Optionally you can add chocolate chips, candied orange or lemon, fennel seeds, ginger.
Soak the dried fruit and let it sit. Meanwhile, mix the remaining ingredients in a bowl. At the end add the soaked fruit with its water and knead the mixture until all ingredients are well blended. Spread the mixture on a baking sheet lined with parchment paper until you get a thickness of about 5mm. Bake at 180 °C for about 20 minutes, remove the pan and cut so as to form the bars. Finally put it back in the oven for 10 minutes to finish cooking, being careful not to let them harden excessively. Allow to cool thoroughly. They can be kept in an airtight tin for cookies, preferably in the fridge.

Homemade Chocolate Pudding  ​

Ingredients: 1lt milk, 80g sugar, 80g butter, 50g unsweetened cocoa powder, 50g sweetened cocoa powder, 1 egg, 90g flour.
Cut the butter into small pieces, when it is softened add sugar, work the mixture well. Join the whole egg and cocoa powder, mix well. Add slowly the heated milk while stirring. Transfer the whole mixture into a saucepan over medium heat and continue stirring. Bring to boil and cook for 2 minutes stirring constantly. Pour the pudding into molds or in one large mold and let it cool for a few hours in the fridge.

Tip: Mouth-watering with peaches in syrup and a glass of juice!

Fast Strawberry Ice Cream

Ingredients: 2 jars of white yogurt, 6 fresh strawberries, 2 mint leaves, honey or, alternatively, powdered sugar.
First of all, the day before put strawberries and yogurt in the freezer. In the blender put the frozen fruit, the yogurt, the honey as you like (or powdered sugar) and the mint leaves. Blend at high speed until the mixture is well blended and creamy.
The ice cream is now ready to serve!

Tips: You can also use frozen mixed fruit from the supermarket. Also, if your kitchen temperature is too hot (as it happens in summer), the blending may melt during processing, so store it in the freezer for a while to get it back perfect.

Sweet Chocolate Sandwich

With a mixer beat in a bowl the following ingredients: 100g butter at room temperature, 100g brown sugar, 1 pinch of salt, 1 bag of vanilla sugar.Add and mix: 2 eggs, 50g unsweetened cocoa powder, 225g built-raising flour, 125ml milch (to add a bit at a time).
Stuffing: ricotta cheese with sugar and jam.
Cover two baking pans with baking paper. With a teaspoon take an small amount of mixture and with the help of another teaspoon slide it on the tray trying to make regular balls at about 3cm away from each other because during cooking they grow. Bake for 10 minutes at 180 °C. Take one chocolate disc and spread it with some stuffing, close it with another disc.
For the stuffing you can use your favourite jam or mascarpone cheese lightly sweetened and mixed with fresh fruit cut into small pieces.

A Savoury Snack: Mini Rösti with Würstel

Ingredients: 2 medium potatoes per 6-7 rösti, 1 or 2 chicken würstel (sausage), salt, oil.
Boil the potatoes and let them cool. Meanwhile, cut the würstel into pieces and put aside in a bowl.Get yourself a grater with large holes, the one used for the carrots. Grate the potatoes being careful not to grate your fingers! Add a bit of salt and the pieces of würstels, stirring gently with a fork or with your hands, if you prefer. Now take a bit of the compound and with your hands make a compact ball, then mash it so that it stays round, then place it on a plate. Heat a bit of oil in the frying pan and fry over medium heat for 5-10 minutes per side. You can use ham and grated cheese instead of the sausage.
