Ingredients: 120g cereal flakes as muesli (oats, rice, rye, etc), 30g wholemeal flour, 30g dried fruit of your choice (bananas, apricots, raisins, cranberries, papaya, etc.), 30g sunflower seeds or sesame, 30g ground almonds or peanuts or other nuts of your choice, 30ml extra virgin olive oil, 100ml water. 30ml juice of your choice, 2 tablespoons honey, 1/2 teaspoon baking soda. Optionally you can add chocolate chips, candied orange or lemon, fennel seeds, ginger.
Soak the dried fruit and let it sit. Meanwhile, mix the remaining ingredients in a bowl. At the end add the soaked fruit with its water and knead the mixture until all ingredients are well blended. Spread the mixture on a baking sheet lined with parchment paper until you get a thickness of about 5mm. Bake at 180 °C for about 20 minutes, remove the pan and cut so as to form the bars. Finally put it back in the oven for 10 minutes to finish cooking, being careful not to let them harden excessively. Allow to cool thoroughly. They can be kept in an airtight tin for cookies, preferably in the fridge.
