Ingredients: 3 eggs, 400g flour, 1 tablespoon baking powder, 100g sugar, 100g butter, 1 pinch of salt, 250ml milk, grated lemon zest, candied fruits, almonds and sugar to decorate, powdered sugar.
Preparation: Put the yeast in a bowl and mix with 4 tablespoons of milk, then add 100g of flour, knead the dough and let it rest covered with a damp cloth until it doubles, it will take about an hour and a half. When the yeast is ready, sift the flour on the table and put the eggs, the sugar, the salt, the remaining milk and lemon zest in the hollow, then add the softened butter into small pieces and the yeast dough, knead well with your hands until you obtain a smooth and elastic dough. Let the dough rise for 2 hours covered with a damp cloth. When the dough is ready, give it the shape of a donut, place a circle in the center to keep the shape, place the surprise (coin and a stone) inside the dough, brush with a little 'milk and place the cake on a flat baking tray coated with baking paper . Place the tray in a preheated oven at 160 ° C for 20 minutes, when the cake is cooked, sprinkle with icing sugar and decorate it with candied fruit. In Spain it is also stuffed in with whipped cream.
